With just 5 simple ingredients, this easy tortilla soup is a must for busy weeknights! And this super easy recipe is a perfect way to use up leftover chicken that you may have on hand. Let’s get right into the recipe for our 5 ingredient chicken tortilla soup.
5-INGREDIENT CHICKEN TORTILLA SOUP
This delicious soup makes for a quick dinner for a busy night and we’re confident that it will become one of your favorites!
1. CHICKEN STOCK
The base of this soup uses chicken stock. We like to use our homemade chicken stock whenever possible for the best flavor. You can also use your favorite low-sodium chicken broth in a box, or even bouillon cubes or Better Than Bouillon Roasted Chicken base.
When we don’t have homemade chicken broth (we love to keep chicken stock in the freezer for when we need it), we love using Better Than Bouillon Roasted Chicken base for a super tasty experience! (It tastes much better than boxed broth).
Add 8 cups of chicken stock to a large pot (3.5 quarts or larger) and set it on your range top on medium heat.
2. CRUSHED TOMATOES
Next, add 1 can (14.5 ounces or so) of your favorite crushed tomatoes and stir it well into the broth.
3. SHREDDED CHICKEN
Into the same pot, add 2 cups of shredded chicken. If you’ve made chicken broth from scratch, you can use the leftover cooked chicken from making the broth. It’s also a great way to use up leftover rotisserie chicken.
We like to package up leftover shredded chicken in freezer bags, in 1-cup portions, to drop into various versions of chicken soup like this recipe.
4. MIXED VEGETABLES
Next, add a 12-ounce package of mixed frozen vegetables right to your pot and stir it in well. We love the Caribbean Protein Blend from Whole Foods. It contains black beans, spinach, kale, kidney beans, corn, red bell pepper and some spices. But you can use any of your favorite mixed, frozen veggies.
5. TACO SEASONING
Lastly, add 1 tablespoon of taco seasoning. We like to use organic taco seasoning, but you can use your favorite taco seasoning or even fajita seasoning.
Bring everything to a simmer. Simmer for 15 minutes and check for seasoning before serving. You can add any additional salt, black pepper, more taco seasoning, or even a little cayenne pepper if you want a little heat.
Next, it’s time to ladle your soup into a big bowl and add your favorite toppings! Of course, it wouldn’t be chicken tortilla soup without the tortillas. You can use prepackaged crispy tortilla strips, homemade tortilla strips, or even crumble up some tortilla chips that you may already have on hand in your pantry.
Some of our other favorite toppings include a dollop of sour cream, chopped red onion or green onion, fresh cilantro, diced avocado, and shredded cheese.
It’s also delicious served with a little lime juice from a fresh wedge of lime. If you like a spicy bowl of soup, you can even top it with some chopped green chilies.
This easy soup recipe is also wonderful for left overs. Just hold off on adding the toppings until after you heat your soup back up! Like most soups, this soup will be even better the next day. Store in an airtight container in the refrigerator for up to 3 days to enjoy later.

- 8 cups chicken stock
- 1 can (14.5 oz) crushed tomatoes
- 2 cups shredded chicken
- Caribbean Protein Blend frozen mixed vegetables from Whole Foods, or any 12 oz frozen mixed vegetables of your choosing.
- 1 tablespoon taco seasoning
Toppings (choose your favorites!)
- Tortilla strips
- Sour cream
- Fresh cilantro
- Diced avocado
- Squeeze of lime
- Shredded cheese
- Chopped onion or green onion
Instructions
- In a 3.5 quart or larger pot, add 8 cups of chicken stock. Place on your range top on medium heat.
- To the pot, add the crushed tomatoes, shredded chicken, mixed frozen vegetables, and taco seasoning.
- Bring everything to a simmer, and let it simmer gently for 15 minutes.
- Check for seasoning and add some salt and pepper to taste.
- Ladle into a bowl and add your favorite toppings!
